Le nombre de personnes souffrant d'intolérance au gluten augmente constamment. Rien qu'en France, on estime à 500 000 le nombre de personnes atteintes. Selon une étude américaine, ces chiffres pourraient être liés à l'utilisation massive du Roundup de Monsanto. L'intolérance au gluten, ou maladie coeliaque, toucherait une personne sur vingt en Amérique du Nord et en Europe.
